Even though Escrima uses pairs of sticks, I suggest that you simply use the statistics given for Baton in Contenders. The fact that Escrima uses a pair of sticks doesn't really enter it - two swords, one sword, two sticks, one stick - it doesn't really matter. Developing a set of modifiers for two sticks would be to overly complicate matters at any rate. It is merely a 'special effect', in that you say that 'Escrima uses a pair of sticks', but doesn't grant any bonuses or penalties. In practice, an escrimador would be capable of using all his Special Maneuvers with only one stick, though the escrimador would prefer using a pair of sticks.
The weapon maneuvers aren't very unique - they are all quite common in any martial art that employs a short stick or pair of sticks. As such, even though there is only a point cost listed for Escrima, there should not be a problem to allow others that meet the prerequisites in Sticks techinque to choose the few maneuvers available to Escrima so far.
Escrima favors trapping in addition to the simple striking techniques, and I will probably develop trapping techniques - in the fullness of time. For now, these are the maneuvers I've developed for Escrima. You might also want to check out Sticks, in the Characters / 3rd Rank section.
The names selected for the Special Maneuvers have no grounding in reality. In reality, I have no idea what an escrimador might call a particular strike. So did what any good roleplayer would do, and lied - more or less convincingly.
